Carrot Pineapple Cake.

For my dinner party Tuesday night, mentioned here, I wanted to make a birthday cake for my friend that was sure to be unexpected.
You all know my love for cream cheese frosting, so if the recipe includes it, I'm making it. I decided on this two layer Carrot Pineapple cake, that did not disappointment. My only regret was feeding my guests so much for dinner that we could barely fit dessert!

  1. This cake looks amazing and I love Ina Garten! She also has the most divine coconut cake (I make it for Easter) that you'll ever try. Warning though: it's takes a really long time to make/bake/put together!!

    I also share the love of cream cheese frosting and try to use it on everything! :)

  21. I have an intense love for cream cheese frosting as well. Is there anything out there that's better? I can't imagine. I could seriously eat it by the spoonful until I feel ill. Your cake looks fabulous! What a sweet way to celebrate your friend's birthday.
