This is quite possibly one of the easiest meals I've ever prepared.
You will need: 2 chicken breasts, 2 large tomatoes, 1 avocado, 1 large cucumber, 1/2 red onion, 1/2 cup feta cheese, 1 lemon, 1 yellow pepper, 1 green pepper, 1 can of chickpeas, olive oil, red wine vinegar, salt & pepper.
Marinate chicken in fresh lemon juice, salt and pepper for 30 minutes, then grill with a bit of olive oil.
Chop peppers, onion, tomato, avocado and cucumber and let sit in 1/4 cup of red wine vinegar.
Mix in feta cheese, chick peas and top with sprinkle of salt, pepper and olive oil.
Let chicken cool, and then mix together in large bowl.
{It's better than you would think for being such a quick and simple recipe}
